Description: The nakiri is a traditional Japanese knife shape ideal for chopping fruit and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to a meat cleaver.
The maker of these special knives starts with limited production high molybdenum and vanadium stainless steel. A special-alloy high carbon steel powder is then forge bonded to each surface of the blade. Finally, this core material is forge-welded between two layers of soft stainless steel and tempered to Rc 63. The resulting blade has an extremely keen, long-lasting edge. Following in the best tradition of knife making, a steel ferrule is forge-welded to the tang to ensure that food particles cannot become lodged between the tang and the handle. The handle, made from multiple layers of wood impregnated with resin, is riveted to the full length tang and will last a lifetime. The blades are fully honed. Accompanied by gift/storage box.
