Description: Bill Burke, who was honored as a journeyman smith June 2003, is best known for creating some of the best hunters that can be found anywhere. Recently, he put his attentions to creating a small number of chef's knives. The results are exceptional.
Honesuki are Japanese boning knives, great for boning chicken and red meats but also amazing as a general purpose utility knife! The shape provides finger clearance when working over a cutting board. A gentle rock to the blade makes it an optimal chopping knife. The thin, aggressive point makes it even capable of detail tasks where a paring knife would otherwise be used.
Like his hunting knives, this honesuki was pre-tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed by Ed Fowler, Bill's teacher, and has been proven to create some of the sharpest and most long lasting edges found anywhere.
A differential heat treatment is clearly visible in the differential hardness line approximately three quarters up the blade. This results in a soft, supportive spine and an extremely hard, long lasting edge. The blade has been convex ground on the left side and hollow ground on the right. This technique makes it ideal for use by a left handed user and makes food less likely to stick to the side of the knife. Additionally, the food is less likely to become bruised by being cut by a knife with this geometry. The bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. The handle is formed from exhibition grade desert ironwood and incorporates a swirling pattern of warm light and dark tones. The knife has perfect balance and feels exceptional in the hand.
