Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. When he puts his attention to creating chef's knives, the results are exceptional.
The European chef's knife (known as a gyuto in Japan) is well suited for use as a general purpose chef's knife -- from chopping, to slicing and dicing -- from fruits to vegetables and meats, the chef's knife is a great choice. The long blade is needed for the sawing motion required to cut meat and vegetables and the slim profile keeps the weight low and the balance right.
Michael began by forging the integral blade to shape using his own damascus steel. By incorporating 8660 as well as 52100 and 15N20 carbon steels, Michael assures a keen long lasting edge, as well as exceptional contrast. The resulting layers of steel form a convoluted, dramatic pattern that traverses the blade.
The bolster is integral -- a technique that, while relatively common in production knives, is very rare in handmade knives due to the difficulty of implementation. Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly.
The handle is formed from maple burl with curly maple accents. By using stabilized woods, Michael is able to combine the beauty of natural wood with durability. Alternating brass and G10 spacers highlight warm tones in the natural wood. The knife has perfect balance and feels exceptional in the hand.
