Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. When he puts his attention to creating chef's knives, the results are exceptional.
The European chef's knife (known as a gyuto in Japan) is well suited for use as a general purpose chef's knife -- from chopping, to slicing and dicing -- from fruits to vegetables and meats, the chef's knife is a great choice. The long blade is needed for the sawing motion required to cut meat and vegetables and the slim profile keeps the weight low and the balance right.
The blade was forged from 52100 carbon steel. Many knifemakers and collectors feel that this steel is among the best steels currently used for knives due to its exceptional edge holding and sharpness. The blade was differentially heat treated using a torch. The etched surface clearly shows the dramatic line showing the transition between soft, supportive steel at the spine and the keen, long lasting edge. The damascus bolster was forge welded to blade, resulting in exceptional strength and beauty. Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly.
The handle is formed from curly maple with maple burl accents. By using stabilized woods, Michael is able to combine the beauty of natural wood with durability. Alternating copper and G10 spacers highlight warm tones in the natural wood. The knife has perfect balance and feels exceptional in the hand.
