Description: The santoku is the traditional Japanese chef's knife. This comfortable design is a fantastic multipurpose chopper -- from chopping, to slicing and dicing -- from fruits to vegetables and meats, the santoku is a great choice. The santoku has quickly become the new favorite for chefs in the West.
This Michael Rader 180mm (7 inch) Wa-Santoku is a new, semi-custom knife. This knife features 52100 steel, heat treated to 60-61 Hrc. Many knifemakers and collectors feel that this steel is among the best steels currently used for knives due to its exceptional edge holding and sharpness. The blade has been antiqued using Wayne Goddard's "mustard" protective finish. This attractive finish helps prevent rust and makes the knife easy to maintain. The blade features a deep finger choil -- making it easier and more comfortable to use the knife with a pinch grip.
The handle is formed from curly maple with darker maple burl accents. By using stabilized woods, Michael is able to combine the beauty of natural wood with durability. It is ambidextrous and is equally comfortable to either a left or right handed user. The knife has perfect balance and feels exceptional in the hand.
