Description: The Kumagoro Blue Nakiri Chef's Knife is a beautiful slicing blade -- its long, slightly curved edge is perfect for portioning meat and chopping vegetables. While it may look like a meat cleaver, it isn't (you'll want a heavier cleaver for breaking bones). Instead, the Kumagoro Blue Nakiri is used like a chef's knife. It is adept at processing quantities of vegetables for stir fry and thinly slicing meats. Once you use it, you'll find yourself reaching for this precision knife more and more often.
Kumagoro Blue Carbon Steel knives feature a premium blue #2 (aogami 2) carbon steel core. This is surrounded by protective SUS410 stainless steel. The combination of a high performance carbon steel core and stainless sides provides the superior edge holding and sharpness of carbon steel with easier care. It is hardened to Hrc 63 for superior edge retention. This gives the blade an exceedingly tough, long lasting and chip resistant edge that is relatively easy to sharpen. While it is much easier to care for this knife than a full carbon steel knife, it still must be hand washed and dried to avoid rusting the core. We recommend using camellia oil to avoid rust.
The blade is exceptionally thin and cuts with virtually no resistance. A convex grind assists food release, minimizing suction when slicing more delicate, moist foods.
A stainless steel bolster separates the blade from the Western style handle. A triple riveted tang runs the full length of the handle for strength and longevity. The comfortable handle is made from Micarta. Micarta holds up exceptionally well to the rigorous demands of a home or commercial kitchen and does not shrink over time.
