Description: Mastersmith Aaron Wilburn, a long time maker of knives for the outdoor enthusiast, has expanded his focus to include culinary knives - creating high-performing kitchen workhorses! This chef's knife draws its inspiration from the Japanese kiritsuke gyuto.
The kiritsuke gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is a perfect general purpose chef's knife. The triangular tip results in a detail oriented, yet stronger tip than the gyuto. The long blade is needed for the slicing motion required to cut meat and the tall profile provides plenty of finger clearance over a chopping on a board. The long, straight spine is perfect for moving foods across a cutting board after chopping. The kiritsuke gyuto is a perfect choice to grab whether chopping onions, mincing parsley, or portioning and slicing meats.
Aaron forged the 8-1/2" satin finished blade from 52100 carbon steel. Many makers and collectors feel that this is the best steel available anywhere for use as a knife blade. The blade was then oil quenched multiple times. Many thermal cycles and normalizing steps ensure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability.
The traditional D-shaped handle is made from presentation grade cocobolo. The cocobolo has warm tones and is contrasted beautifully by a buffalo horn ferrule. The ferrule is nicely sculpted to accommodate a comfortable pinch grip. Both the cocobolo and the buffalo horn will hold up well to the heavy demands of either a professional or home kitchen.
