Description: Jessica Burke is the 19 year old (as of the spring of 2016) daughter of Mastersmith Bill Burke. In the last couple of years, Jessica has begun making knives under the watchful supervision of her master smith father. The results have been absolutely amazing!
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The damascus blade was forged to shape by Jessica. She began with 15N20 and 1084 carbon steels, forging them into a intricate spirograph pattern. The heat treatment followed the formulas developed by Mastersmiths Bill Burke and Ed Fowler. This technique creates some of the sharpest and most long lasting edges found anywhere! A differential heat treatment line travels approximately half way up the blade. This shows the division between the softer, supportive spine, and the keen, long lasting edge.
The handle is formed from presentation grade ringed gidgee wood. Ringed Gidgee is a unique and rare Australian hardwood and is in the Acacia family (same family as Koa). This difficult to find timber is highly sought after by knife makers. It is known for its depth of color, beautiful figure and extreme hardness. Gidgee is classified as the third hardest wood in the world. The handle is nicely carved to swell at the palm, move into a slimmer waist and finally to swell again at the beak at the end of the handle.
The knife has perfect balance and this ensures it is as much of a joy to use as it is to look at!
