Description: Jessica Burke is the 19 year old (as of the summer of 2016) daughter of Mastersmith Bill Burke. In the last couple of years, Jessica has begun making knives under the watchful supervision of her master smith father. The results have been absolutely amazing!
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The santoku is the traditional Japanese chef's knife. This comfortable design is a fantastic multipurpose chopper. The santoku has quickly become the new favorite for chefs in the West. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The san mai blade was forged to shape by Jessica. She began with a 52100 carbon steel core and surrounded this with ladder pattern damascus she forged from 15N20 and 1080 carbon steels. Many makers and collectors feel that 52100 is among the best steels available for knifemaking. The undulating ladder pattern damascus sides are extremely elegant.
The handle is formed from stabilized presentation grade cherry wood burl. The twisted figure of the wood nicely complements the damascus pattern. The handle is set with two small mosaic pins surrounding a central larger mosaic pin. The handle is nicely carved to swell at the palm, move into a slimmer waist and finally to swell again at the end of the handle. The bolsters is formed from 416 stainless steel.
The knife has perfect balance and this ensures it is as much of a joy to use as it is to look at!
