Description: Jessica Burke is the 19 year old (as of the summer of 2016) daughter of Mastersmith Bill Burke. In the last couple of years, Jessica has begun making knives under the watchful supervision of her master smith father. The results have been absolutely amazing!
This high performance utility knife is perfect for slicing fruits, vegetables, and meats. The thin blade produces a very clean, even cut without bruising the food being sliced.
The damascus blade was forged to shape by Jessica. She began with 15N20 and 1080 carbon steels, forging them into a bold jellyroll pattern. The heat treatment followed the formulas developed by Mastersmiths Bill Burke and Ed Fowler. This technique creates some of the sharpest and most long lasting edges found anywhere! A clear differential heat treatment line shows the transition between softer, supportive steel at the spine, and the hard edge steel.
The handle is formed from stabilized presentation grade redwood burl. The twisted figure of the wood nicely complements the damascus pattern. The handle is nicely carved to swell at the palm, move into a slimmer waist and finally to swell again at the end of the handle. The bolster is formed from 416 stainless steel.
The knife has perfect balance and this ensures it is as much of a joy to use as it is to look at!
