Description: What do you get when you incorporate the recurve blade of a Norwegian gutting knife with the long, thin blade of a fillet knife – just possible the best fillet knife you ever owned! This knife is intended for salmon and other large finish.
The recurve 7-1/4 inch blade has a tendency to center on the fish and reduces the effort needed to smoothly guide the blade over the ribs. The shape is also very handy when removing fins. The blade has a distal taper to reduce weight and improve balance.
The Dymondwood grips have a very deep choil (cut-out) for the forefinger to rest in. This makes the knife easy to hold – even with slippery, wet hands. The grips are secured with nickel silver pins. By using stabilized wood, Jim Arbuckle ensures the handles will hold up to the heavy demands of outdoor use. The scraper (spoon) is shaped to be optimal for cleaning along the spine of salmon and other large fish.
