Description: Jessica Burke is the 19 year old (as of the gall of 2016) daughter of Mastersmith Bill Burke. In the last couple of years, Jessica has begun making knives under the watchful supervision of her master smith father. The results have been absolutely amazing!
This high performance paring knife is a perfect choice for detail work in the kitchen. From removing the heads from strawberries, to peeling an fruits and vegetables, this knife will excel. The damascus blade was forged to shape by Jessica. She began with 15N20 and 1080 carbon steels, forging them into a bold twisted W's pattern. The heat treatment followed the formulas developed by Mastersmiths Bill Burke and Ed Fowler. This technique creates some of the sharpest and most long lasting edges found anywhere!
The handle is formed from extremely rare high Arctic muskox horn. Muskox horn is one of the most rare and majestic handle materials used in the knife world. The highly polished musk ox has a unique grain structure that immediately grabs the eye. The handle scales are carved to nestle in the hand, with full tang construction for strength and durability. The handle is nicely carved to swell at the palm, move into a slimmer waist and finally to swell again at the end of the handle. The bolsters are formed from mokume gane that was forged from copper and brass. The copper and brass bring out warm tones in the horn.
The knife has perfect balance and this ensures it is as much of a joy to use as it is to look at! Excellent fit and finish throughout!
