Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steels, result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This playful knife was created from antique materials recovered from an antique buggy. The buggy had been sitting abandoned on a family property owned by the Burkes. A stamp on the buggy said it was made in 1883. All parts of this knife are from the buggy except the pins.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The blade was hand forged in a technique known as hon san mai. A section of the wrought iron wheel was stacked up and folded six times. The wrought iron was then split and a section of the suspension spring was forge welded in, wrapped with the wrought iron. Burke heat treated the blade in water -- a technique borrowed from Japanese swords. The grinds reveal the natural transition between the wrought iron and carbon steel. The flats are forge finished in a Japanese technique called Kurouchi. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust.
Weathered oak scales were made from part of the buggy's seat frame. The antique wood is extremely stable and set on the full tang with Acryglas and hand domed pins. The western style handle is very comfortable and will hold up exceptional well under use.
