Description: The chef’s knife is the essential kitchen knife. It's used for all-around food preparation. The traditional Japanese blade shape (called a gyuto) has slightly less curve than a Western chef's knife, which means it contacts the cutting board along more of its length, so more food is cut per slice. The Sukenari chef's knife has a gentle roll off the tip compared to the large belly on a Western style knife, so it has to be lifted less, making cutting more efficient.
Sukenari is a small bladesmith shop in Toyama Prefecture, located approximately in the center of Honshu. The company has been in business for two generations and is widely known for its excellent work using quality steels with impeccable grinds.
The Sukenari ZDP series features hand ground, three layered (san mai) blades. The satin finished (migaki) face of the blade is convex ground to reduce sticking and friction during cutting. The edge is an ambidextrous 50/50 grind. This light weight, perfectly balanced knife is sure to be a favorite in your kitchen.
The core of the blade is formed from legendary ZDP-189 stainless steel, hardened to 65-67 Hrc (extremely hard!), clad with softer stainless steel. This technique, known as san mai, produces a knife with a keen, durable, long lasting edge. ZDP-189 is an amazing powdered metallurgical stainless steel and is exceptionally high in carbon and chromium content. This creates a blade that has a superior, long lasting keen edge. The migaki satin finish is this knife brings a classic look to a modern day steel.
The octagonal "Wa" style handle is sculpted from macassar ebony with a buffalo horn ferrule. This natural, ambidextrous handle is easy to grip and lasts a lifetime. Octagonal handles are very popular among professional chefs because they are comfortable even when used for hours at a time. Like other kitchen knives, this knife should not be put in a dishwasher.
