Description: Alaskan knifemaker, Master Smith Adam DesRosiers is well known for his elegant, hard working knives. His chef's knives are truly exceptional.
Chef's knives are the general purpose knife in the kitchen. From slicing tomatoes to chopping onions, this knife will get the task done perfectly. It is sure to be a kitchen favorite.
Adam forged this integral chef's knife from Cru Forge V carbon steel. This steel from Crucible is a vanadium-modified, high-carbon blade steel specifically designed to offer the forgeability of carbon steels such as W1, 1086 or 52100, while providing improved wear resistance in finished blades. The addition of vanadium promotes the formation of hard vanadium carbides in the micro-structure, adding to the abrasive wear resistance of the material compared to plain high carbon steels. It provides a strong, long lasting edge. The integral bolster is a hallmark of Adam's work and shows tremendous skill at the forge. The Parkerized manganese phosphate finish (MIL-STD 171) provides limited rust resistance with a sturdy non-reflective finish. By forging closely to shape, Adam ensures optimal grain structure for a keen, long lasting edge. The blade is beautifully thin for clean, perfect cuts.
The handle is formed from presentation grade curly koa. It is nicely sculpted for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. The stabilized wood will hold up beautifully to hard use, though this knife would feel at home in most any collection. A bronze spacer adds nice contrast.
