Description: Michael Rader was honored as mastersmith June 2010. Over the years, he has gained a reputation for creating some of the best chef's knives found anywhere. This, combined with his exquisite woodworking skills, truly sets him apart from other knifemakers.
The chef's knife (known as a gyuto in Japan) is the primary knife in the kitchen -- from chopping, to slicing and dicing -- from fruits to vegetables and meats, the chef's knife is a great choice. The long blade is needed for the sawing motion required to cut meat and vegetables while the slim profile keeps the weight low and the balance right. At 2.15 inches in height, there is plenty of finger clearance for a rocking chop.
Michael began by forging the blade to shape using his own damascus steel. Five separate steels were combined to create the complex, high layer count damascus. This ensures exceptional performance and beauty. The bolster was created by forge welding damascus to create integral bolsters. Alternating copper and black fiber spacers assist the handle to adjust to changes in humidity and temperature.
The handle is formed from pear wood and has an end cap is formed from maple burl. The top and the bottom of the handle are meticulously inlaid with koa, box elder and maple burl. By using stabilized woods, Michael is able to combine the beauty of natural woods with durability.
The knife is accompanied by a custom wood saya. Michael combined Peruvian walnut with koa to create this exquisite wood blade guard. A bamboo and koa pin will keep the knife safe while in transit or in storage.
