Description: Handmade by Journeyman Smith Jim Arbuckle, this small chef's knife is a perfect choice for chopping in the kitchen. From mincing garlic and shallots to chopping fruits and vegetables, this 3-34 inch chef's knife is a great choice for the cook who prefers a smaller knife, but wants finger clearance over a cutting board to allow for a comfortable rocking chop!
The 4 inch blade is forged from high performing 5160 carbon steel. It is hardened and double tempered to 58 Hrc. A hand rubbed satin finish lends an heirloom quality. The blade is convex ground to minimize food sticking to the blade. This technique is much more effective than a granton edge! Lazy "S" filework along the tang adds tremendous visual impact. The fileworked is filled for a flat, easy to clean surface. The blade is distal tapered, ensuring a perfect balance.
Because this kitchen knife is made from carbon steel, it will have exceptional edge holding, but will need slightly higher care. The knife must be dried after use. Especially at the beginning, we recommend using camellia oil to avoid rust and encourage a protective blue/grey patina. Like other chef's knives, Arbuckle's Chef's Knife with Zebrano Wood should be hand washed rather than putting through the dishwasher.
The contoured grips are formed from presentation grade African zebrano wood (Microberlinia brazzavillensis). By stabilizing the wood, Jim ensures that the knife will hold up well to the demanding environment of either a home or commercial kitchen. A deep choil provides a comfortable, secure place to rest the 1st finger. The handle allows for several different grips and makes the knife easy to maneuver even with slippery hands.
