Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steels, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
The scimitar is a time-proven design, optimized for butchery that includes cutting steaks from large pieces of hanging meat. This is also the preferred knife for filleting large saltwater fish such as salmon. Similar pieces are often used on sport fishing boats and by employees of commercial fisheries (though perhaps not of this quality!). The blade is 12-3/4 inches in length and measures 1.8 inches at the widest point. The main function of the curved tip is to give clearance and stop the point from getting caught in whatever is being cut.
Like his hunting knives, this large scimitar was pre-tested for edge flex and cutting ability before assembly. The damascus blade is Burke's Dragon's Breath pattern damascus. This is among the most famous patterns that Bill has created.
The handle is formed from presentation grade snakewood (Brosimum guianense). Finding a piece of snakewood this large, imperfection-free, and with such dramatic striations virtually unheard of. The scales are set on the distal tapered full tang using hand domed pins. The bolster is formed from 416 stainless steel.
This is a truly exceptional scimitar. Despite the large blade, a distal taper ensures a perfect balance. It will be a joy to use, though it would certainly be at home in any collection.
