The Ohishi ZDP-189 series features hand ground, three layered (san mai) blades. The satin finished (migaki) face of the blade is convex ground to reduce sticking and friction during cutting. The edge is an ambidextrous 50/50 grind. This mid-weight, perfectly balanced knife is sure to be a favorite in your kitchen.
The core of the blade is formed from legendary ZDP-189 stainless steel, hardened to 63-64 Hrc (extremely hard!), clad with softer stainless steel. This technique, known as san mai, produces a knife with a keen, durable, long lasting edge. ZDP-189 is an amazing powdered metallurgical stainless steel and is exceptionally high in carbon and chromium content. This creates a blade that has a superior, long lasting keen edge. The migaki satin finish is this knife brings a classic look to a modern day steel.
The Western style handle is made from black pakkawood set on a full tang. Two rivets surround a custom mosaic pin made from copper and brass. The stainless steel bolster brings weight to the center of the knife and provides durability. This ambidextrous handle is easy to grip and lasts a lifetime.
