The nakiri chef's knife is a traditional Japanese knife form ideal for chopping and slicing fruits and vegetables, as well as boneless meats. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. The Nakiri chef's knife is a tremendously versatile kitchen tool.
Joe forged the blade to shape from Hitachi Aogami 2 (blue steel). This Japanese carbon steel ensures spectacular edge holding. A mustard finish provides a beautiful forced oxidation layer that helps protect the knife from rust. Despite that, we still recommend washing, drying, and oiling the knife after use. It is flat ground nice and thin behind the edge, providing great food release and perfect slicing.
The handle combines black walnut wood with reconstituted turquoise spacers. The combination is extremely engaging! It is contoured for a secure, comfortable grip. The handle is so comfortable, you won't want to put this one down.
