Description: The curved blade of a bird's beak paring knife is perfect for peeling, garnishing and decorating -- from apple coring to zucchini peeling, and a lot of small jobs in-between. This knife, also known as a tourne knife, is used to create an oblong-shaped cut for vegetables such as carrots, potatoes or squash that provides a distinctive and consistent appearance to the food item being served. The Dragon Fire Apogee tourne knife (DRGF-BEAK-0250) is quite versatile.

BD1N nitrogen steel (Hrc 63 - very hard!) combines a razor edge with durability. Hand sharpened to a 16 degree bevel, it creates a high performing precision edge that will last extraordinarily well for years to come. The 50/50 edge is equally good for left and right handed users.
Ergonomically crafted from FDA-approved red/black linen Micarta, the handles are smooth, yet grippy when wet. Micarta holds up beautifully to the high demands of either a home or commercial kitchen. Three stainless steel rivets and a stainless endcap set the handle in place. The end-cap is made of 18/10 stainless steel, which provides outstanding stability and balance.
