Description: Handmade by Journeyman Smith Jim Arbuckle, this fine point slicer is a perfect choice for slicing in the kitchen. Fine cuts of fruits and vegetables are a breeze. The slender shape also makes this a great choice when removing silver skin from meat. It will help at expertly removing meat from bones and even filleting fish.
The 5 inch blade is formed from high performing 154CM stainless steel. It is hardened and triple tempered to 59-60 Hrc. A hand rubbed satin finish lends an heirloom quality. The spine has been slightly rounded to make it easy on the hands. The blade is convex ground to minimize food sticking to the blade. Though this technique is much more difficult to create, it is much more effective than a granton edge, and is clearly worth the effort!
The contoured grips are formed from presentation grade buckeye burl (Aesculus spp). By stabilizing the wood, Jim ensures that they will hold up well to the demanding environment of either a home or commercial kitchen. "Lazy S" filework along the tang adds tremendous visual impact. By filling the fileworked section with polished black epoxy, this gives the beauty of hand filework without the hassle of cleaning food particles out of it. A deep choil provides a comfortable, secure place to rest the 1st finger. The handle allows for several different grips and makes the knife easy to maneuver even with slippery hands.
