Very satisfying to use. (12/1/2005)
Dan helped me select this knife over the phone. (Listen to his advice. He was right about everything.) The Tojiro changed the way I prepare food. It is beautiful, nimble, precise and friendly to use, except for two minor cuts. I can slice and mince more precisely, and slice through tomatoes and other soft foods that I thought needed a serrated blade. But it is a little delicate. Don't try to use it as a cleaver or with the brute force of a typical western-style chef's knife. Unfortunately, a small dent appeared in the edge after mincing garlic. I think the hard end of a garlic clove did it. Treat the knife with care and respect, and you will be delighted.
