Description: Journeyman Smith Jim Arbuckle resides in Yorktown, VA. He started making knives in 1979 and has been forging knives since 1996. Growing up in Washington State, he spent most weekends hunting and fishing and has a great understanding of what features make a knife perform. This fillet/boning knife is an excellent choice when removing meat from bones on poultry, fish, and red meats. This piece is handmade and one-of-a-kind - there's not another one like it in the world!
The blade is high performing, low care 154CM stainless steel and has a hand-rubbed satin finish. It was hardened and triple tempered to Rc 59-60 for excellent edge retention. A deep choil provides a comfortable rest for the forefinger to provide excellent grip and control. Jim's mark is on the left side of the blade.
The spine moves into a fileworked tang. Modified bamboo filework between the scales has been filled with black epoxy and polished. This gives the beauty of filework without the hassle of cleaning food particles out of it. The handle is dyed and stabilized curly maple, secured to the full tang using stainless pins. The contoured handle is extremely comfortable and will hold up well to the high demands of either a commercial or home kitchen.
