This chef's knife is lightweight, has excellent cutting geometry, and a nice tall heel for plenty of height over the cutting board.
This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The long, deep-bellied blade is great slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. This knife, with its deep belly combines a German-influenced shape with a nimble Japanese edge geometry. From chopping to slicing, this will be your go-to knife.
The blade is hand forged Shiro 2 carbon steel san mai. A central core of Takefu Shiro 2 is surrounded by stainless steel. A thin nickel shim separates the two materials, stopping carbon migration and making a more dramatic transition. Shiro2 carbon steel takes an incredibly sharp edge and holds onto it. It is very responsive to honing and sharpening stones. The stainless sides make daily care easier. Dave's touchmark is on the left side of the blade.
The handle is dyed and stabilized Japanese elm burl, ensuring a durable, resilient handle. The faceted handle is carved to accommodate a comfortable pinch grip. This is sure to become a favorite in your kitchen! Like other knives, this knife should not be put in the dishwasher.
