Description: De Wet van Zyl is a bladesmith from Durban, South Africa. He started making knives in 2005 and has been a full time knifemaker since 2007. He spent two years apprenticing with Mastersmiths Kevin and Heather Harvey at Heavin Forge in Belfast, Mpumalanga before opening Darkwing Blades in April, 2009. He was named as a Maker to Watch by Blade Magazine and has won numerous awards over the years.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade is forged from van Zyl's own san mai. A high performance O1 carbon steel core is surrounded by 3Cr12 stainless steel for easier care and rust resistance. Because the blade is forged from carbon steel, we recommend camellia oil to avoid rust and oxidation. This blade is extremely thin for high performance cuts.
The Japanese inspired octagonal handle is dyed and stabilized curly maple. The slim handle feels great in your hand and is very lightweight. A brass bolster seals the handle and prevents food or water from getting in. Like other knives, this knife should not be put in the dishwasher.
