Description: If you spend any time in the kitchen, would like to have a knife that is as attractive as it is useful, and don't want the typical off-the shelf chef's knives, check out this handmade beauty by Jim Arbuckle. This chef's knife will quickly become your go-to knife in the kitchen. It is well suited to slicing and chopping.
Based on the Japanese nakiri (vegetable cleaver), this striking one-of-a-kind cutting tool has the double bevel geometry you'd expect from a Western knife with the rectangular shape of a traditional Japanese knife. It is ideal for chopping and slicing. The thin edge geometry makes it a precision tool, rather than the Arbuckle equivalent to a meat cleaver. It also has a double beveled chisel tip to facilitate slipping the blade under items on flat surfaces to lift or turn them.
The deep blade provides plenty of finger clearance so your knuckles don't hit the cutting board while chopping. A hallmark of Arbuckle's work, it utilizes a very deep choil (cut-out) for the forefinger to rest in. This makes the knife easy to hold onto even with slippery hands.
The blade is 154CM stainless steel with a hand rubbed satin finish. It is hardened and triple tempered to Hrc 58-59 for excellent edge holding. Jim's mark is on the left side of the blade.
The spine moves into a fileworked tang. Modified serpentine filework between the scales has been filled and polished. This gives the beauty of filework without the hassle of cleaning food particles out of it. Bocote wood handle scales are set on the full tang and will hold up well to the high demands of either a commercial or home kitchen. The handle is contoured with a deep choil - this semi-circular cut-out allows the forefinger to rest comfortably and makes the knife easy to hold in several different grip options. Like other knives, this knife should not be put in the dishwasher.
