Description: The love for gastronomy, quality and construction mixes together in a somewhat magical way to give Stelios Christos Drakopoulos (also known as Dikristo) a life purpose: one of the first 100% Greek handmade chef's knives. This exquisite Dikristo chef's knife was handmade by Drakopoulos Stelios. A native of Athens Greece, Stelios was born in 1983. He is a home cook, food lover, and knifemaker. We were extremely impressed with this latest batch of knives from him! This paring knife gets its name Abderus from the Greek mythological hero most known for his tragic role in Heracles Eigth Labor.
Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function — removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The san mai blade features undulating, brightly colored brass, copper and stainless steel sides surrounding a V-Toku2 carbon steel core. V-Toku2 is a 'super-steel' created by Takefu, in Japan. Very high in carbon content (approx. 1.1%), this steel holds and takes an amazing edge. The effect created by the mokume gane sides is extremely captivating! The spine and choil have been nicely rounded for comfort.
The Japanese-inspired ambidextrous octagonal handle is stabilized thuya burl. The wood has a nice combination of irregular grain structure with burl figure showing on the top and bottom of the handle. The mokume-gane bolster complements both the blade and wood nicely.
A custom storage bag with Dikristo's mark is included to safely store the knife when not in use.
