Description: C. Luis Pina, is an exceptional bladesmith and specializes in kitchen knives. He apprenticed under Mastersmith David Lisch. Luis' past career as a chef provides him with an understanding of chef's knives that is rarely found elsewhere. This knife is perfect for boning, filleting, and general butchery work.
Luis began forging this integral knife beginning with 1080 and 15N20 carbon steels. The biased Ws damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge. The convex edge will provide excellent chip resistance and food release.
The bolster is integral to the blade. Integral bolsters have superior structural integrity but require a particularly talented smith to pull off.
The handle is stabilized black palm wood. It is nicely contoured for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. The stabilized wood holds up beautifully to hard use, though this knife would feel at home in most any collection. Black G-10 and silicon bronze spacers assist the handle to adjust to temperature and humidity changes in the kitchen.
