Description: Russell Dodd is a knifemaker from Boise, Idaho focusing on making folders, hunters, and chef's knives. He is currently serving as president of the Idaho Knife Association. In his spare time, he is a champion bird hunter who has trained many award winning bird dogs. Being an avid outdoorsman, he understands what is required to make a good knife. He has taken many classes with renowned Mastersmith Bill Burke. Due to this, his understanding of heat treatment techniques is exceptional.
Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is hand forged 52100 carbon steel. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. Dodd's touchmark is on the left side of the blade. Because the blade is forged from carbon steel, recommend using camellia oil to prevent rust.
Handle scales are black Micarta, set on a full tang using two pins. Micarta holds up well to the high demands of a home or professional kitchen and does not become slippery when wet. The scales are dovetailed to polished stainless steel bolsters that are carved to comfortably accommodate a pinch grip. Red fiber liners contrast elegantly against the jet black scales. Like other knives, this parer should not be put in the dishwasher.
