Description: Francisco Vaz lives in Rio Grande, Brazil. He has been making knives since 2017 and is a master of chef's knives. Each knife that he creates is a handmade, high performance work of art. He grinds all of his knives by hand without the use of jigs and believes heavily in making his knives by hand.
Sujihiki are slicers or carving knives that are well suited for slicing and portioning meats and fish due to the thin, long blade. Extremely sharp, they are also well suited to preparing sushi and sashimi. The extended blade length allows you to slice with one long stroke, instead of sliding the knife back and forth in a sawing motion. The result is a superior, clean cut.
The blade is satin finished 14C28N stainless steel made by Sandvik in Sweden. 14C28N is tough, chip, resistant, highly corrosive resistant, and maintains good edge retention. The knife has exceptionally thin geometry for clean, high performance cuts.
The Japanese-inspired octagonal handle is rosewood. Despite the long blade, this knife is very nimble in hand. Like other kitchen knives, this knife should not be put in a dishwasher.
