Description: Ian Rogers hand builds each knife one-at-a-time without the use of waterjet or laser cutters. He is one of the very few knifemakers in the world that forges his own stainless damascus in-house. Ian's understanding of chef's knives is exceptional. His knives have a tremendous sense of presence and flow.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. Whether chopping, slicing, dicing, or mincing, this will be your go-to knife!
The blade is hand forged 52100 carbon steel with a hand rubbed satin finish. Many knifemakers (such as Mastersmiths Bob Kramer, Bill Burke, and Ed Fowler) and users feel that 52100 carbon steel is among the highest performing steels used to make modern knives. A forge finish (called kuro-uchi in Japan) along the top of the blade helps facilitate food release. The spine and choil are rounded to reduce sharp corners.
The handle is inspired by a traditional Japanese handle called a half-round. The top features facets. The bottom of the handle is nicely rounded. This shape affords ergonomic control and comfort. This handle shape, while being different from Western handles quickly becomes a favorite. The handle combines presentation grade curly walnut with a Gold Dark Matter FatCarbon ferrule at the front.
