Description: I was very excited when I first got a look at Jean Wilke's knives. Jean is a custom knifemaker from Pretoria, South Africa. His knives are exceptionally well designed and tested. His attention to detail is clearly evident in each of his creations. He is currently working with Mastersmiths Kevin and Heather Harvey, travelling back and forth every two weeks, alternating between working at Heavin Forge and home forge, Fire Goby Forge. It is very exciting to see such a young maker with such tremendous talent.
This award winning chef's knife is a perfect choice for the cook that prefers a smaller, more easily controlled knife. The 6-1/4 inch blade is distal tapered, ensuring that knife is easy to maneuver and has perfect balance. Whether slicing, dicing, or chopping, this hand forged chef's knife will make easy work of the task. It is sure to become a kitchen favorite.
The blade is forged from Jean's own mosaic damascus, combining carbon steels to ensure excellent edge holding and chip resistance. The blade combines a twisted Ws pattern edge with a tile mosaic Damascus spine. The steel was a collaboration between Wilke and Kevin Harvey (MS), Stan Hohowsky, Dave Skinner (KGSA), Rick Alfonso (Charman, Cape Guild) and Theunis Greyling (Treasurer Cape Guild). The pattern is extremely engaging and will have you staring at it for hours. The spine and choil are rounded for comfort. Jean's mark is on the left side of the blade. Because this knife is forged from carbon steels, we recommend using camellia oil to protect the blade from rusting.
The synthetic ivory handle is sculpted to provide a comfortable grip. The thin, contoured handle is extremely nimble and easy to control. The handle is secured with a hand domed pin. At just 3.6 ounces, this knife will be a joy to use for hours. The front of the handle is sealed with an anodized titanium bolster.
Like other knives, this knife should not be put in the dishwasher.
Excellent work throughout! Given the exceptional level of work, it is maybe no surprise that it won awards at several shows in South Africa. It won Best Kitchen Knife at the 2023 Cape Town Show, Best Kitchen Knife at the 2023 Brooklyn Knife Show, and 2nd Place Working Knife at the 2023 Bloemfontein Knife Show.
