Description: Jordon Berthelot is knifemaker from New Braunfels, TX and a member of the Texas Knifemakers' Guild. He has been making custom knives since 2018. He makes all kinds of knives from fighters, bowies, hunters, skinners and occasionally swords, but his biggest passion is high end kitchen knives. He enjoys incorporating carving and complex grinds into his blades. He also often prototypes new steels coming out of Baker Forge in the US.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade will be a great general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. A kiritsuke style tip gives a sharper tip for more detailed tasks.
The 8-1/2 inch blade is Baker Forge Wavy TigerMai. Damascus cladding forged from bronze, copper, and 1084 carbon steel surrounds a central 100 layer damascus core forged from carbon steels. The resulting pattern is stunning and will have you staring at the blade for hours. The spine and choil are nicely rounded for comfort. The ridge along the spine is hand carved by Jordan to help with food release. We recommend using camellia oil to protect the blade and natural wood handle.
The handle is dyed and stabilized masur (karelian) birch. The wood nicely complements the bright bronze and copper in the blade. A black carbon fiber bolster seals the front of the handle. The handle is sculpted to swell at the middle before moving into a slimmer waist and swelling again at the beak. This style of handle will remain comfortable even after hours of extended use. This is a knife you won't want to put down!
This knife includes a box, zipper case, microfiber cloth, and laser engraved certificate of authenticity with care instructions.
