Description: Sujihiki are slicers or carving knives that are well suited for slicing steaks due to the extra long blade. Extremely sharp, as they are they are also well suited for preparing sushi and sashimi.
These knives are created using the time-tested traditional forging techniques of Japanese swordsmiths. The central core is V metal 10 stainless steel.  This steel, high in molybdenum, vanadium and cobalt, holds an incredible edge. Surrounding this hagane (inner core) are 16 layers of soft jigane, called suminagishi or damascus steel. Following in the best tradition of knife making, a steel ferrule is forge-welded to the tang to ensure that food particles cannot become lodged between the tang and the handle. The handle, made from multiple layers of wood impregnated with resin, is riveted to the full length tang and will last a lifetime. The blade comes razor sharp and fully honed.
