Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. Recently, he put his attention to creating chef's knives. The results are exceptional.
Like his hunting knives, this santoku was pre-tested for edge flex and cutting ability before assembly. The santoku is the traditional Japanese chef's knife. This comfortable design is a fantastic multipurpose chopper. The santoku has quickly become the new favorite for chefs in the West. This santoku, with a 9 1/4 inch blade is longer than usual, and the result is exceptional! This is a perfect knife for the chef that likes the look, feel and performance of Japanese knives, but wants a slightly longer santoku.
The long blade is forged from virgin 52100 carbon steel. Popularized by Mastersmith Ed Fowler, this steel out performs virtually every other steel currently used on knives. A marquench results in particularly long edge holding and a keen edge. Adding to the exceptional performance, Michael has forged the blade to be thin and more in the tradition of Japanese knives, than their bulkier European knives. The bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. The handle is formed from stabilized curly maple and has excellent chatoyancy -- a pattern that changes in different lights. Warm toned amboyna burl is used throughout for accents. The knife has perfect balance and feels exceptional in the hand.
