Description: This exceptional chef's knife is the master work of bladesmith Kelly Dallyn. Kelly explains the maker's mark on his knives is his family's cattle brand, which has been passed down to his dad by his grandmother. He thought that when he started to make knives he would use something that stood the test of time to mark them. With this brand on his knives and the craftsmanship that he put into them, he knew they too would stand the test of time long after he is gone.
This knife is a classic European chef's knife shape and is perfect knife to use as a primary 'go to' knife. The handle provides plenty of finger clearance when working over the cutting board. The blade has a deep belly which is perfect for a rocking chop.
The blade is high performing S35VN stainless steel with a hand rubbed satin finish. It is brought to a razor edge and has excellent strong edge geometry. A deep belly and a rounded heel are well thought out traits to Kelly's knives.
The ironwood handle scales are dovetailed to the bolsters and have warm tones. The wood is secured by nine bronze pins -- resulting in a very strong handle and an attractive contrast. The 410 stainless steel bolsters are domed and polished for a perfect balance and an elegant appearance. Exceptional fit throughout.
