Description: Okeya knives are made by a multi generational family blacksmith shop run by Okeya-san and his son. Okeya-san's grandfather started the company making small, handy knives (kiridashi) for multi-purpose uses such as cutting, whittling, and some cooking utility knives. They plan to make knives for generations to come.
The paring knife is a must-have for every kitchen. It gets its name from its main function—removing or "paring" away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
A central core of hard Shirogami #2 is set between thin layers of stainless steel, resulting in a keen, long lasting edge with easier maintenance. White steel is a favorite of sushi chefs for tasks requiring a very fine edge. It is a steel that tests the skill of the bladesmith in both forging and heat treating. The blade has a migaki (satin) finish.
The ambidextrous oval handle fits comfortably and securely in the hand. It is formed from ho wood and is completed with a plastic ferrule.
