Description: Washington knifemaker, C. Luis Pina, is an exceptional bladesmith and specializes in kitchen knives. He is currently apprenticing under Mastersmith David Lisch. David's eye for design clearly shines through Luis' work on this tremendous chef's knife. Additionally, Luis' past career as a chef provides him with an understanding of chef's knives that is rarely found.
Luis perfectly captured the essence of the Japanese sujihiki when he made this knife. This high performance sujihiki is well suited to all sorts of slicing tasks in the kitchen. From slicing and portioning meats and fish to roasts, this knife is a perfect choice!
Luis began forging this integral chef's knife beginning with 1080 and 15N20 carbon steels. The fine patterned damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation. Luis included a small bottle of camellia oil with the knife. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge. The blade is beautifully thin for clean, perfect cuts.
The handle is fumed from stabilized presentation grade curly myrtle wood. It is nicely sculpted for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. This stabilized wood will hold up beautifully to the hard demands of either a professional or home kitchen. Thin black G10 and silicon bronze spacers assist the handle to adjust to temperature and humidity changes in the kitchen.
The bolster is fully integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith.
