Excellent, But Needs A Little Love (9/22/2008)
This is a very fine knife for the money but compromises are made on the fit and finish of the handle.
When I received mine the scales were fitted very roughly and it was quite uncomfortable, so as a result I found it necessary to use some sandpaper to smooth down the edges to make the scales flush to the tang and the bolster, once that was done I sharpened it up and this is where I began to really love this knife.
Unlike traditional style Nakiri this is not quite so wide, more standard in this regard like a Santoku or short Gyuto, the core steel is very good considering the price, the knife, in keeping with its name, has a very thin grind and the core steel supports it well. I was concerned the edge might begin to fail quite quickly but it lasts very well.
All in all it is the best Nakiri that I have used -- and I have used many -- trying to find one that I could enjoy using over the long term. I prefer it compared some of the most revered Japanese knifemakers, such as Shigefusa, Moritaka and Masamoto.
If you are willing to spend a small amount of time improving the handle a little you can get an excellent knife at a very good price, this knife is far better than it looks and well worth taking a chance on.
