Well balanced, an amazing knife (3/20/2015)
Just picked this one up from the shop. Daniel was extremely helpful and took the time to help me pick the right knife. Look forward to picking up other pieces from this maker while their still available. As Asai passed away last year, a great blades mith has been lost. I won't buy a knife from any other shop. I can't say enough positive feed back about Epicurean Edge. The only place real professionals shop

I have three knives from Asai and all I can say is WOW! So light, so balanced and so sharp. I have had them now for two years and just had them in for sharpening. They really didn't need to be sharpened but I figured what the heck. Let me just say that the sharpening done by Epicurean Edge blew me away. They are sharper than when I first got them. I didnt think they could get any sharper but they did. The Epicurean Edge did an unbelievable job. Daniel was right, they take their knife sharpening serious. Awesome job Epicurean Edge. Don't take your knives anywhere else for sharpening.

How can a knife be fun? (1/15/2011)
Several events (holiday meals) with this blade made me a convert. I had a torrid affair with another Santoku that got hopelessly damaged, and my wife replaced it with this knife. With this knife I turned some rare heirloom tomatoes found at a produce market in winter into see-through decorations on a platter; flew through high volume potato, miscellaneous vegetable, and miscellaneous meat prep sessions for curries and stews with grinning results. I usually like my knives utilitarian looking. I bow to the Asai PM - beauty that outperforms. The handle is so much better than the "ergonomic" or "standard" shapes in high volume situations. My damaged stiff hands find the handle easier to work with for long sessions than the ergonomic ones.
The Damascus isn't sufficient to break contact with slices more than any other knife but are no worse. and beautiful. It's freakishly sharp. It's also beautiful.
